Favorite Fall Crockpot Recipes

Something about fall makes me want to cook all my meals in the crockpot. And no lie I’ve been doing mostly crockpot meals this whole month! I love how easy it is! Just throw the ingredients in, wait a few hours, and then you’ve got yourself a meal.

Below I’ve outlined my favorite recipes including the original recipe and any tweaks, tips, or tricks we have for them! I try to always follow the recipe the first time and then I add/subtract to it as needed the following times! Unless it has an ingredient we don’t like of course haha! Hope you enjoy!

Parmesan – Garlic Chicken and Potatoes

This recipe makes the best chicken hands down! It literally falls off the bone – so delicious! I don’t usually like chicken with the skin and bone still on but this one definitely changed my mind!

Our Tweaks: We don’t add the cheese to make it a bit healthier. And instead of regular butter we use Trader Joe’s roasted garlic and herb butter spread. (You can read about it here.) Just reinforces those flavors!

White Chicken Chili

I’m not exaggerating when I say this is the only chili I eat. There is not much I like about traditional chili but since this is so different from that I am obsessed. This recipe actually makes enough for 6 so we make the full amount and just eat the leftovers. I swear this chili tastes even better the next day!

Our Tweaks: We’re not a huge fan of white beans so we used chickpeas instead and it worked great! We also don’t add the fresh jalapeno – it’s a bit too much for my stomach. We do add hot sauce when serving so we still get the kick though.

Our Tips: The ingredients you add for serving really make this dish. Sour cream or greek yogurt really brings it together as well as avocado. Trust me that you NEED those ingredients. Also this will be a bit runny the first day – smashing the beans helps but isn’t magic. However if you eat it for leftovers it will be much less runny so we haven’t cut the chicken broth down in the recipe.

Creamy Tomato Soup

I haven’t always been a tomato soup fan and honestly I’m still pretty picky about it. Panera Bread’s tomato soup was really the only one I would eat until I tried this recipe. This soup is Caleb’s favorite so I knew I would have to find one we both liked!

Our Tweaks: We followed this recipe exactly as it was and we loved it! The only thing I would suggest is making some garlic bread (using the Trader Joe butter spread I mentioned above) to go with it! Soup requires something to dip into it!

Stuffed Peppers

I love stuffed peppers! One of my favorite meals but I love this tex-mex spin on them! So much better than the original!

Our Tweaks: I’m not a huge black bean fan so I didn’t add those and didn’t replace with another bean. We also cooked the rice on the side so mine could be a bit healthier but Caleb could add it to his. You can also forgo the cheese for a healthier option too!
